Salads And Dressings - Chicken Melon Salad

2 cantaloupes
2 cups cooked chicken, cubed
1/2 green pepper, chopped
1 pound seedless grapes
2 stalks of celery, chopped
2 green onions, chopped
1 cup shredded lettuce
1/2 tea. seasoned salt
dash of pepper
1/2 cup mayonnaise
1/2 cup sour cream


Slice cantaloupes in half; remove seeds and chill in refrigerator.

Combine remaining ingredients. Using ice cream scoop or large spoon, mound salad in the center of each melon half. Serve on lettuce greens, if desired.

Yield: 4 servings

Notes: low-fat or non-fat mayo and sour cream may be used for a low-calorie dish.

5 cups cooked Chicken, cut in small pieces 1 cup browned slivered Almonds 2 cups seedless Green Grapes, washed and halved 2 cups chopped Celery, chopped Dressing: 2 cups Mayonnaise 1 pt. 2 1/2 -3 cups cooked diced chicken 1 cup sliced celery 2 tbsp. chopped green onion or chives 1 tsp. salt 2 tbsp. lemon juice 1 (11 oz.) can mandarin oranges, drained 1/2 tbsp. grated lemon peel 2 tbsp. capers 1 (9 oz.) can pineapple chunks or tidbits 1/2 cup slivered almonds, toasted 1/2 cup mayonnaise Combine chicken, celery, onion, capers. Mix in salt and lemon juice. Chill several hours. Just before serving add fruit and almonds. Combine mayonnaise and lemon peel. Mix in carefully so as not to bruise fruit. Spoon into a bowl lined with lettuce greens to serve.
