Salads And Dressings - Chicken - Chicken Salad By Connie

3 cups cooked chicken or turkey, cut into bite-sized pieces
1 cup diced celery
2 tablespoons grated onion
3 tablespoons capers, drained
2/3 cup browned, slivered almonds
3 tablespoons tarragon vinegar (or more if you like)
6 stuffed olives, sliced
1 can water chestnuts, sliced
Salt, pepper and paprika, to taste
1 cup mayonnaise
1/3 cup sour cream


Mix all ingredients except mayo and sour cream. Sprinkle with vinegar and seasonings. Let stand at least 1/2 hour longer. Then add the mayo and sour cream mix -- turn out onto a lettuce-lined platter and surround the salad with strawberries, melon slices, pineapple, grapes, etc.

5 cooked, boneless chicken breast. 1 cup chopped celery 1 cup white raisins 1 cup plain low fat or fat free yogurt 1/2 cup low fat or fat free mayonnaise 1 Tablespoon lemon juice 1/2 teaspoon salt 1/2 teaspoon pepper Chop chicken breast and combine with celery and raisins. Combine yogurt and mayonnaise, lemon juice and seasonings and stir into chicken mixture. Chill in fridge before serving. makes 10 half cup servings. Variation: Instead of raisins you may use Craisins. Add 1/2 of a 7 oz can water chestnuts, chopped Add 1 teaspoon curry powder or to taste.

4 boneless skinless chicken breast halves (about 1-1/4 lb.), cooked, shredded 1 cup chopped celery 3/4 cup KRAFT Mayo Real Mayonnaise 1/4 cup sliced green onions Add some poultry seasoning and Mrs. Dash 4 sandwich rolls, split Leaf lettuce Some dill relish would be good if wanted. Mix chicken, celery, mayonnaise and green onions. Fill rolls with lettuce and chicken salad mixture.
