Salads And Dressings - Beet Salad (estonian Rosolje)

3 beets, boiled in jackets
6 potatoes, boiled in jackets
4 dill pickles
2 apples
2 hard-boiled eggs
2 cups bologna, roast beef or pork (cooked)
1 salted herring

Dressing:
1 Cup sour cream
1 tsp. mustard
1/2 tsp. sugar
1/4 tsp. pepper
2 Tbsp. vinegar


Soak herring overnight in a bowl of cold water. Then clean and chop fish. Chop all rest of ingredients into 1/2-inch cubes. Blend all of dressing ingredients and pour over cubed food. Mix well and serve.

Refrigerate until ready to serve.

Drain grease. Stir in taco seasoning, chili powder, garlic powder and drained kidney beans. Cool. Shred (or slice thin) lettuce in a large bowl. Add 2 large tomatoes chopped, cheese, olives and salsa (optional). Stir in cooled beef
