Salads And Dressings - Avocado - Chunky Guacamole
1 large ripe tomato, diced2 ripe avocados, diced
2 scallions
2 green chilies
2 Tbsp. parsley
1 tsp. ground coriander seed
1 Tbsp. olive oil
1 Tbsp. red wine vinegar
1 tsp. salt
Toss tomatoes, avocados, scallions and chilies together. Set aside. Mix remaining ingredients to make dressing. Pour dressing over tomato mixture.
