Salads And Dressings - Ambrosia Carrot Salad

6 medium carrots, peeled and grated
1 medium can crushed pineapple - Undrained
1 (11 oz.)can Mandarin oranges - Undrained
1 (7 oz.) pkg. coconut
1 (9 oz.) container Cool Whip
2 cups mini marshmallows
1 (3 oz.) pkg. cream cheese, softened


Mix all ingredients together. Beat cream cheese, then add to other ingredients, mixing well. Refrigerate overnight.

1 cup mixed fruit or fruit cocktail 1/2 cup Mandarin oranges 1/2 cup pineapple bits 1/2 cup minature marshmallows 3/4 cup sour cream 1/4 cup maraschino cherries -- halved 1/4 cup red seedless grapes lettuce cups -- optional Drain fruits well. Combine all ingredients except lettuce, mixing lightly but throughly. Chill well. Serve in lettuce cups with salad dressing, if desired.

2 eggs 4 tablespoons vinegar 4 tablespoons sugar 4 tablespoons butter 1 can (19 oz.) fruit cocktail (drained) 2 cups pineapple tidbits 2 cups mini marshmallows 1 cup whipping cream Crack eggs into the top of a double boiler over gently boiling water. Add vinegar and sugar beating constantly until thick and smooth. Remove from heat and add butter stirring until it is melted. Cool. When cold, fold in whipping cream (which has been whipped) and fruit. Turn into a mold and refrigerate for 24 hours before serving.
