Rice - Side - Lemon Rice By Beck

1 cup water
2 chicken bouillon cubes
1 tablespoon butter
1/2 cup Uncle Ben's rice, uncooked
1 clove garlic, minced
1/2 teaspoon lemon zest
1/8 teaspoon pepper
1 1/2 teaspoons parsley


In a saucepan add water and bouillon. Heat to a boil. Remove from heat. Dissolve cubes. Add remaining ingredients. Bring to a boil. Stir. Reduce heat and simmer 20 minutes covered, stirring occasionally.

1 cup rice 2 cups chicken broth 2 Tbl. butter 2 Tbl. lemon juice 1 tsp. lemon zest or more, to taste salt and pepper to taste 1/2 cup freshly grated Parmesan cheese 8 Tbl. finely chopped chives or green onions 8 Tbl. minced parsley In saucepan combine rice, broth and butter.
