Rice - Rice-n-mushroom Casserole

1/2 cup long-grain rice
4 tablespoons butter
1/4 pound mushrooms,sliced
1/2 cup chopped onion
1 1/4 cup water
1 beef bouillion cube


Preheat oven to 350° F.

Cook rice in butter in skillet, stirring constantly, till nicely browned. Pour into 1-quart casserole dish.

In same skillet, cook up the mushrooms and onions till tender. Add water and bouillion cube. Heat till boiling. Pour over rice in casserole and cover. Cook at 350 for 40 to 45 minutes.

1 package yellow rice (mine was 200 grams) 1 (10 3/4 oz.) can cream of chicken soup 1(11 oz.) can Mexi-corn (corn with peppers) 1/2 cup butter, melted 1 cup grated cheddar or pepper jack plus more, if desired Cook the yellow rice according to the package directions, omitting any fat or oil. Combine rice with remaining ingredients and put in a greased 2-quart casserole. Bake at 350 for 20 minutes or until bubbly. Top with additional cheese last few minutes of baking if desired.

1 cup uncooked rice 1/2 cup chopped green pepper 1/2 cup chopped onion 1 tsp. minced garlic 1/3 of an 8 oz. can of water chestnuts, coarsely chopped 1/2 tsp. salt freshly ground pepper to taste 8 oz. tomato sauce 1 qt. whole tomatoes with liquid (squished) Mix all together in a large casserole. Place 4-6 pork chops on top of rice mixture. Season pork with garlic salt and freshly ground pepper. Bake at 350* for 45-60 minutes. Serves 4-6..
