Rice - Rice And Vermicelli (rizi Me Fithi)

2 oz. butter
1 oz. vermicelli
12 oz. basmati rice - washed
1 tsp. lemon juice
1 3/4 pints water or stock

Melt the butter; add the vermicelli and brown well. Add the rice and mix in very well. Season with salt and pepper. Add 1 teaspoon of lemon juice and the stock; mix again. Bring to the boil, cover and simmer for 15-20 minutes until rice is cooked.

1/2 lb. fresh mushrooms 1 cup chopped onions 1 cup long grain rice 1 tin consomme 1 3/4 cups water lemon juice Bring water and consomme to a boil, add rice and simmer gently until all liquid is absorbed. Meanwhile saute onion in butter, slice mushrooms and drizzle with lemon juice, add mushrooms to onions, and cook until done. (Lemon juice will keep the mushrooms from turning dark). Add to rice, season to taste.

Cook rice according to package directions without using oil or butter.
