1 (16 oz.) can red kidney beans
1/2 lb. smoked sausage (ground or cut into small pieces)
Cajun seasoning (to taste)
2 green onions, chopped fine
1 tsp. pepper
Cooked rice

Mash kidney beans except for 1 cup.Add all ingredients except for rice to a medium size pot and bring to a boil, lower heat and simmer about 20 minutes.

Serve in bowls, topped with 2 Tbsp. cooked rice
