Rice - Grandmother's Rice Dish

1 cup brown rice, or white, cooked
2 (7 oz.) cans green chilis, chopped
3/4 to 1 lb. Jack cheese, grated
1 (8 oz.) carton of sour cream


Preheat oven to 350 degrees F.

Mix chili's, and rice and divide in half. Grate cheese and divide in thirds. Place 1/2 rice mixture in baking dish, 1/3 cheese, sour cream, 1/3 cheese, 1/2 rice and 1/3 cheese. Bake 350 for 40 minutes. May be prepared and refrigerated one day in advance.

8 oz. Monterey Jack cheese 2 cups sour cream 4 oz. canned chopped green chilis 4 cups cooked rice Salt and pepper to taste 1/2 cup grated Cheddar cheese Preheat oven to 350° F. and grease a 2-qt. casserole.Cut Monterey Jack cheese into strips. Mix sour cream and green chilis together in a small bowl. Alternate layers of rice, Monterey Jack cheese and sour cream in a greased 2-qt. casserole pan. Bake for 30 minutes. After 15 minutes of baking, sprinkle top of casserole with grated Cheddar cheese.

4 T Butter 2 C white rice 4 c water 2 t salt 1/4 -1/2 t black pepper On medium heat, melt the butter in a fry pan; add the rice. Fry the rice until it is browned (this takes around 5-7 min) add the water. Stir in salt and pepper. Bring up to a boil. Reduce heat to maintain a low boil. Cover and let steam for 20 min. or until water is absorbed. Uncover and let stand for 5 min. fluff with fork and serve.
