Rice - Fruity Rice Mix

11 cups uncooked long grain rice
4-1/2 cups diced dried apricots
2-1/2 cups golden raisins
1-1/2 cups slivered almonds
1 cup chicken bouillon granules
3 Tblsp. brown sugar

Additional ingredients needed:
2 cups water
1 Tblsp. butter or margarine

In a bowl, combine the first six ingredients and mix well. Store in airtight containers in a cool dry place for up to 6 months.

Yield: 21 batches (21 cups total).

To prepare rice: In a saucepan, combine 1 cup rice mix, water, and butter. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until water is absorbed.

Yield: 4 servings per batch.

2 Tbsp. olive oil 2 cups uncooked brown rice 6 garlic cloves, minced 1-1/2 cup water 2 13-oz. cans no-salt chicken broth 1/2 tsp. salt 4 Tbsp. sliced green onions Heat oil in a large skillet over medium high heat. Add rice; saute for one minute. Add garlic, saute for 2 minutes. Stir in water, salt and broth. Bring to a boil. Cover, reduce heat to medium low, cook for 45 minutes or until liquid is absorbed. Top with sliced green onions. Makes 6 one-cup servings 291 calories, 6.2 g. protein, 7.4 g. fat

2 Tbl. oil 1 1/2 cups white rice 1 small green pepper, chopped 1 medium onion, chopped 1-3 crushed cloves of garlic (to your taste) 1 (16 oz.) can chopped tomatoes (with or without jalapenos) 2 cups water Salt and Pepper Heat oil in large skillet and add rice stirring frequently so that it does not burn. This should take about 3-5 minutes. (The ends of the rice should be starting to turn brown.) Add the other ingredients all at once, stirring to mix ingredients. Cover tightly; adjust heat to slow boil. Cook for 15-20 minutes.
