Rice - Casserole - Green Rice

2 1/2 cups cooked rice
3/4 cup chopped parsley
1/3 cup grated Cheddar cheese
1/4 cup chopped onion
3 tbsp. chopped green pepper
1 small clove garlic, minced
12 oz. evaporated milk
2 small eggs, beaten
1/3 cup vegetable oil
2 tsp. salt
1/4 tsp. seasoning salt
1/4 tsp. pepper
1/4 tsp. Accent
juice and grated rind of 1/2 lemon
Paprika


Mix rice, parsley, cheese, onion, green pepper and garlic in a greased 2 quart casserole. Blend in remaining ingredients. Sprinkle with paprika. Bake at 350 for about 45 minutes or until the consistency of a soft custard.

4 cups cooked rice 1 (10 oz.) pkg. frozen chopped broccoli -- defrost and drain 1 small onion -- chopped 1 cup milk 1/2 cup vegetable oil, or as little as 1/4 cup 1 lb. Velveeta Cheese -- cubed Preheat oven to 350 degrees F. Saute onion in oil. Mix all ingredients well. Place in greased or sprayed casserole and bake at 350 degrees for 1 hour. If you make this ahead and freeze it do not add milk (the rice will absorb it). Make as directed omitting milk; then freeze. Defrost when ready to use and then add milk.
