Rice - Casserole - Broccoli Rice Casserole

1 stick butter or margarine, melted
2 (10 oz) pkg chopped broccoli
1 cup chopped onions
1 cup chopped celery
1 (10 3/4 oz) can cream of mushroom soup
1 (10 3/4 oz) can cream of celery soup
2 cans water
2 cups minute rice
salt & pepper to taste
1 (8 to 16 oz) cheese whiz, softened

Melt butter or margarine in a 9 x 13 greased pan. Add chopped broccoli, onions and celery mix well. In a bowl mix soups, and water together; pour over broccoli mixture. Add rice, salt and pepper mixing well then add the cheese whiz. Stir until well mixed.

Bake at 350 for approx. 1 1/2 hours.

1 small onion chopped 1/2 cup chopped celery 1 package frozen (10 ounce) chopped broccoli, thawed 1 tablespoon butter or margarine 1 jar (8 ounce) process cheese spread 1 can (10 3/4 ounces) condensed cream of mushroom soup undiluted 1 can (5 ounces) evaporated milk 3 cups cooked rice Preheat oven to 325° F.In large skillet over medium heat, saute onion, celery and broccoli in butter for 3 to 5 minutes. Stir in cheese, soup and milk until smooth. Place rice in a greased 8 inch square baking dish. Pour cheese mixture over, do not stir.

Source: "Deliciously Healthy Favorite Foods Cookbook" 2 cups cooked long grain rice 2 packages frozen (10 oz. each) chopped broccoli, steamed until barely tender 1 can (10 oz.) cream of chicken soup 1/2 cup nonfat milk 1 can sliced water chestnuts, drained and chopped 1/4 cup each: chopped celery and onion 1-1/2 cups grated fat-free cheddar cheese (6 oz.), divided Preheat oven to 350 degrees F.Mix rice, steamed broccoli, soup, milk, chestnuts, celery, onion and 1 cup cheese. Pour into a casserole sprayed with non-stick spray. Top with remaining 1/2 cup cheese.
