Poultry - Turkey Parmigiana

1 pacakge turkey breast slices
2 egg whites
1 Tblsp milk or water
1/2 cup seasoned bread crumbs
2 Tbsp. Parmesan cheese
1 cup pasta sauce
4 ounces mozzarella cheese, sliced

Preheat oven to 400°.

In a shallow bowl, beat egg white with milk or water. In another shallow bowl, combine bread crumbs and Parmesan cheese.

Dip cutlets into egg mixture, then into bread crumb mixture. Arrange on greased 10 x 15 x 1 baking pan.

Bake 4-5 minutes.

Spoon sauce evenly over cutlets. Top each cutlet with a slice of cheese. Bake 4-5 minutes more to heat sauce and melt cheese.

Serves 4.

3 TBS oil 1 large onion, chopped 1 green pepper, chopped 1 lb. ground turkey 1 (14 1/2 oz.) can diced tomatoes 1 tsp. dried oregano salt and pepper 1/3 C raisins 1/2 C sliced green olives 2 TBS capers, rinsed and drained Heat oil in large skillet. Add onion and green pepper. Sauté over medium heat until tender, about 7 minutes. Add turkey and sauté, stirring, until color changes. Add tomatoes, oregano, salt and pepper to taste, and raisins. Bring to boil. Simmer over medium heat 5 minutes. Remove from heat and stir in olives and capers. Serve over rice

Poultry - Turkey -  Turkey Marinade
1 clove crushed garlic 3 Tablespoons orange juice (I use pineapple/OJ) 3 Tablespoons soy sauce 1 Tablespoon honey 2 Tablespoons finely chopped green onion 1/2 teaspoon ground ginger 1/2 teaspoon black pepper dash of cayenne if desired 1 lb raw Turkey (ground, breast meat, tenderloins) Combine ingredients. Let stand for 1 hour. (If using ground turkey, form into burgers & squeeze extra marinade out.) Grill, baste and serve. Discard leftover marinade.
