Poultry - Turkey Casserole - Turkey Tetrazzini

1 package (7 ounces) spaghetti
2 cups turkey or chicken broth
2 cups half and half or milk
1/2 cup flour
1/4 cup butter
1/2 tsp salt
1/4 tsp pepper
1 tsp chicken bouillon granules
1/2 cup grated parmesan cheese
1 cup shredded cheddar cheese, divided
2 cups cooked cubed turkey
3/4 cup frozen peas and carrots
1/4 cup sliced almonds

Cook spaghetti as directed on package. Rinse with cold water and drain. Set aside.

Preheat oven to 350 degrees.

Mix broth, half and half, flour, butter, salt and pepper, and the chicken bouillion in a 3 quart saucepan. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in Parmesan cheese and 1/2 cup cheddar cheese.

Stir in spaghetti, turkey, peas and carrots, and almonds. Spread in 2 quart ungreased casserole dish. Sprinkle with remaining cheddar cheese. Bake uncovered 25 to 30 minutes or until hot and bubbly.

Yield: 4-6 servings

1 (8 oz.) pkg. cooked egg noodles 2 Tbl. butter 1 (6 oz.) can sliced mushrooms 1 tsp. salt 1/8 tsp. pepper 2 c. chopped cooked turkey 1 c. sour cream 1 can cream of celery soup 1/2 c. Parmesan cheese Cook pasta 8-10 mins until al dente; drain. Preheat oven to 375. Melt butter. Saute mushrooms for 1 min. Season with salt and pepper. Stir in turkey, soup, and sour cream. Place noodles in 9x13 inch dish. Pour sauce evenly over the top. Sprinkle with cheese. Bake for 20-25 mins. or until sauce is bubbling.
