Poultry - Peking Chicken

Ingredients~
1/2 head lettuce - thinly sliced
2 large onions - peeled and sliced
2 lbs chicken - diced
2 medium bay leaves
2 medium carrots - thinly sliced
2 medium zucchini - cubed
1 teaspoon ginger
2 bay leaves
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic
1 cup canned tomatoes
8 ozs. noodles.


Preheat oven to 350° F.

Method~
In a large baking dish, layer lettuce, half onions, chicken and seasonings.

Then layer the rest of the onions, carrots, zucchini, and tomatoes.

Cover and bake in oven for 45 minutes or until chicken and vegetables are tender.

Meanwhile cook noodles as directed. Drain.

Serve chicken and vegetables over noodles.

4 boneless skinless chicken breasts 4 oz. Place chicken between wax paper or plastic wrap, and flatten to 1/4 inch thickness. Cut cheese into 4 sticks approximately 2 inches long by 1/2 inch thick. Place cheese stick in center of each chicken breast. Roll chicken around cheese, folding in ends. Secure with string or wooden picks, if necessary. Mix crumbs with pepper, paprika, and garlic salt to taste. Dip

2 lbs. chicken parts 3 tbsp. flour 3 tbsp. shortening 1 can Franco-American® chicken gravy 1/3 cup sour cream 1 cup sliced onions 1 clove garlic -- minced 2 tsp. paprika 1/2 tsp. salt Flour chicken pieces and brown in shortening; pour off any drippings. Mix together any remaining ingredients and pour over the chicken. Cover and simmer 45 minutes or until chicken is tender. Serve with noodles or rice. Serves 4
