Poultry - Parmesean Chicken For One

1/2 tsp olive oil
1 T grated fresh parmesean cheese
1/8 tsp dried thyme
1/8 tsp dried oregano
1/8 tsp salt
dash of black pepper
cooking spray
1/4 cup chicken broth

Preheat oven to 400 degrees.

Brush chicken breast half with olive oil. Combine cheese and next 4 ingredients in a small bowl and sprinkle cheesemixture over chicken breast on both sides.

Place chicken in a shallow dish and pour broth over chicken.

Cover and bakeat 400 degrees for 40 minutes or until done.

1/3. c. butter or margarine 3 Tbl. Dijon mustard 1/2 tsp. 2 Tbsp lemon juice 1 cup plain yogurt 2 Tbsp flour 2 Tbsp Dijon mustard 1/4 tsp Worcestershire sauce 1/2 tsp dried thyme leaves 4 Tbsp Parmesan cheese paprika Preheat oven to 350° F.Spray casserole dish with cooking spray. Place chicken in dish and sprinkle with lemon juice.Combine yogurt, flour, mayonnaise, mustard, Worcestershire sauce, thyme and Parmesan and pour over chicken. Sprinkle with paprika and bake, uncovered, in preheated 350 oven for 1 hour, or until chicken tests done with a fork.
