Cornish Hens with Dressing

6 Cornish hens (sprinkle with poultry seasoning) 1/3 cup chopped celery
1/3 cup chopped onions
1/3 cup chopped carrots
1/2 cup oil or butter
1 Tablespoon fresh minced garlic or sprinkle of dried
2 Tablespoons of either honey or pineapple or orange marmalade
1 cup minced apples
1 Tablespoon parsley flakes
1/2 cup bread crumbs or cooked rice
1/2 cup diced mushrooms
1/2 cup chopped walnuts, pecans, etc.
Bay leaves
White wine

Cook celery, onions, and carrots in oil or butter with garlic. Combine with remaining ingredients and stuff Cornish hens with mixture. Brush with butter and add bay leaves and white wine to pan. Pepper Cornish hens and sprinkle with paprika. Bake at 350 degrees for approximately 45 minutes to 1 hour.

4 Cornish hens, halved, rinsed and dried 1 teaspoon salt 1/2 teaspoon white pepper 1/4 cup chopped fresh parsley 1/4 cup chopped fresh sage 1/4 cup chopped fresh oregano 1/4 cup pine nuts, finely chopped 2 tablespoons minced garlic 1/2 cup (1 stick) butter, softened 1/2 cup fresh lemon juice 1/2 cup fresh lime juice 1 cup dry white wine In a large bowl, mix salt, pepper, parsley, sage, oregano, pine nuts and garlic. Blend with butter to moisten. Place 1 to 2 tablespoons of mixture under the skin of each breast. Place hens in a 9- by 13-inch glass

2 to 3 Cornish hens, halved 1/2 c butter or margarine 2 cans chicken broth 2 c. rice, uncooked 1 large onion, chopped 1 large jar or can mushroom pieces Melt the butter in pan and add the rice and onion. Cook until rice is browned. Add mushroom pieces and chicken broth. Pour into large baking dish. Place the salted Cornish hen halves on the rice and cover with foil if baking dish does not have a cover. Bake at 350 degrees for at least an hour. Most of the moisture will be cooked up when dish is done.
