Poultry - Game Hens - Cornish Hen Rice Bake
2 to 3 Cornish hens, halved1/2 c butter or margarine
2 cans chicken broth
2 c. rice, uncooked
1 large onion, chopped
1 large jar or can mushroom pieces
Melt the butter in pan and add the rice and onion. Cook until rice is browned. Add mushroom pieces and chicken broth. Pour into large baking dish. Place the salted Cornish hen halves on the rice and cover with foil if baking dish does not have a cover. Bake at 350 degrees for at least an hour. Most of the moisture will be cooked up when dish is done.
