Poultry - Fireman's Chicken

1 cut up chicken, skin removed
1-1/2 c. Russian dressing
1 envelope dry onion soup mix
1 cup apricot preserves
salt and pepper to taste
1 medium onion


Preheat oven to 350° F.

Place chicken in baking dish (13 x 9), salt and pepper to taste.

In 2 qt. saucepan, place Russian dressing, onionsoup and preserves; heat until mixture is blended together.

Pour over chicken, cut onion into rings; place on top of chicken. Cover with foil.

Place breasts in buttered dish (8 x 8-inches). Cover with cheese, then soup mixture. Top with stuffing. Pour butter over top.

Feta Chicken 4 skinless, boneless chicken breast halves dry breadcrumbs 1/4 cup crumbled feta cheese (1 ounce) fresh chives, basil, and/or whatever herbs you like 2 Tblsp butter, melted Preheat oven to 400° F.
