Poultry - Crock Pot Chicken Cacciatore
One (2 1/2 to 3 lb.) chicken (remove skin)One (14 1/2 oz.) can stewed tomatoes
One (8 oz.) can tomato sauce
2 cloves garlic, diced
1 medium onion, diced
2 stalks of celery, chopped
1 teaspoon oregano
1/2 teaspoon sweet basil
1/2 teaspoon rosemary
1/2 teaspoon cilantro
1 teaspoon salt
1/4 teaspoon pepper
Place chicken in crock pot.
Mix stewed tomatoes and tomato sauce together. Add the rest of the ingredients to the tomato mixture and mix well.
Pour over the chicken and turn the crock pot on high until the mixture begins to boil.
Turn down on low and let simmer 8 - 10 hours.
Serve over pasta or rice.

4 boneless skinless chicken breasts 1/2 c. water 1 envelope Italian salad dressing mix 1 (8 oz) pkg light cream cheese softened 1 can 98% fat-free cream of chicken soup 1 (4 oz) can mushroom pieces drained Place chicken in bottom of crock pot. Combine salad dressing mix and water, pour over chicken. Cover and cook on low for 3 hours. In a small mixing bowl beat cream cheese and soup until blended. Stir in mushrooms and pour over chicken. Cook 1 hour longer or until chicken juices run clear. Serve over 1 cup of rice or pasta per serving. Yields:
