Poultry - Chicken - Tetrazzini For 2

2 cups frozen broccoli cuts
1 (7 1/2 ounce) can of semi-condensed cream of mushroom soup with wine
2 Tablespoons milk or wine
Generous dash of ground oregano
1 can (5 ounces) chunk white chicken, undrained or 1 cup diced chicken or 6 1/2 ounce tuna, drained
Hot buttered noodles
Parmesan cheese

In a saucepan, cook broccoli in 1 inch boiling water until tender (4 to 6 minutes); drain. In a saucepan combine soup, milk, oregano, chicken, and cooked broccoli; heat. Serve over noodles. Sprinkle with cheese.

1 1/2 cups salsa 3 tablespoons light brown sugar 1 tablespoon Dijon mustard 4 boneless chicken breasts 4 cups cooked white rice Mix together salsa, brown sugar and mustard. Spoon 1/3 of mixture into an ungreased baking dish. Lay chicken breast on top. Cover with remaining salsa mixture. Bake at 350 degrees for 45-60 minutes. Serve with rice.

1/4 cup packed brown sugar 3 tbl. low-sodium soy sauce 2 tbl. thinly sliced green onion 2 tbl. bourbon whiskey 1 tbl. grated peeled fresh ginger 1/2 tea. dark sesame oil 1/8 tea. crushed red pepper 2 garlic cloves, minced 1 lb. skinned, boned chicken breast, cut into bite size pieces 1 tbl. vegetable oil 1 (1lb.) Italian cheese-flavored pizza crust (Boboli) 1 1/2 cups Healthy Choice Fancy Mozzarella cheese shreds, divided 1/2 cup red bell pepper stripes 1/4 cup diagonally sliced green onions Combine first 8 ingredients in a bowl. Stir in chicken; cover and marinate in refrigerator 30 minutes.
