Poultry - Chicken - Peanut Noodles With Chicken

8 ounces fettuccine
2 cups roasted skinless, boneless chicken
breasts, chopped (about 2 breasts)
2 cups thinly sliced red bell pepper
1 teaspoon dark sesame oil
2 garlic cloves, minced
1 tablespoon minced fresh ginger
2/3 cup water
1/3 cup natural-style peanut butter
1/3 cup hoisin sauce
1 tablespoon seasoned rice wine vinegar
1/2 teaspoon Asian chili sauce
1/2 cup chopped green onions
1/2 cup chopped fresh cilantro

Cook pasta according to package directions, omitting salt and fat.

Combine chicken and bell peppers in a colander. Drain pasta over chicken mixture; let stand 5 minutes.

Heat oil in a small saucepan over medium-high heat; add garlic and ginger. Cook 1 minute, stirring frequently; add water, peanut butter, hoisin sauce, vinegar and chili sauce. Cook 1 minute or until thoroughly heated, stirring with a whisk. Combine pasta mixture and sauce in a large bowl; toss to coat. Stir in onions and cilantro. Yield: 4 servings

4 skinless-boneless chicken breast, sliced in half 2/3 cup chopped pecans 1 egg -- beaten 2 Tablespoons milk beaten with egg 1/2 cup bread crumbs salt and pepper 1 teaspoon creole seasoning (optional) Dip chicken in egg wash then into the crumb mixture. Fry in 2 Tbl. of butter and 1/4 veg. oil. Drain on paper towel. Raspberry Sauce 1(12-ounce) bag of frozen raspberries 1/4 cup sugar 1/2 cup water 1/2 cup raspberry jam Combine all ingredients in sauce pan. Simmer over medium heat for approximately 20-30 minutes, stirring occasionally. This sauce maybe stored in the refrigerator.

Dijon mustard 1/4 lb. prosciutto or ham, thinly sliced 2 Tbl. flour 1/2 tsp. tarragon 1 egg, slightly beaten 1/3 cup grated Parmesan cheese 1/2 cup dry fine bread crumbs 4 Tbl. butter, melted 4 Tbl. white wine 3 fresh peaches, sliced Preheat oven to 375 degrees F.Pound chicken breasts between wax paper until 1/8-inch thick. Spread mustard on one side of chicken. Top with prosciutto. Roll up chicken breast secure with toothpicks. Mix flour with tarragon. Mix bread crumbs with Parmesan. Dip chicken roll-up in
