6 - 8 chicken breasts - boned and skinned3/4 cup (1-1/2 sticks) butter or margarine
1 teas. curry powder
1/3 cup Malibu (coconut flavored rum)
1 cup heavy cream
Melt butter or margarine in pan and saute chicken, covered, 10 minutes on each side.
Combine curry powder and cream. After 20 minutes, add Malibu and cream mixture. Cook down to thicken sauce (about 10 minutes).
