Poultry - Chicken - Mai Tai Chicken

1/2 cup soy sauce
1/4 cup fresh ginger
2 Tbl. Chinese 5 Spice
1/8 tsp. Kosher or sea salt
1/8 tsp. black pepper
4 (10 oz.) chicken breasts
1 Tbl. cornstarch
1/4 cup water
2 cups Mai Tai mix
1 Tbl. Da Fruta passion fruit juice
1/4 cup dark rum

Combine soy sauce, salt, pepper, Chinese 5 Spice and ginger. Marinate chicken (leave skin on) in mixture for 4 hours in refrigerator.

Bake 20 minutes at 350 degrees.

To make sauce, dissolve cornstarch in 1/4 cup water. Whisk together Mai Tai mix, dark rum, fruit juice and cornstarch in a small saucepan. Bring to a boil, then serve over chicken. Serves 4.

6 - 8 chicken breasts - boned and skinned 3/4 cup (1-1/2 sticks) butter or margarine 1 teas. curry powder 1/3 cup Malibu (coconut flavored rum) 1 cup heavy cream Melt butter or margarine in pan and saute chicken, covered, 10 minutes on each side.Combine curry powder and cream. After 20 minutes, add Malibu and cream mixture. Cook down to thicken sauce (about 10 minutes). Makes 4 servings.
