Poultry - Chicken - Lemon Rosemary Chicken

1 chicken
1 lemon
2 garlic cloves (to 3)
2 teaspoons dried rosemary, crushed
1/4 teaspoon coarsely ground black pepper
Olive oil
3/4 lb. potatoes, cut into eighths
3/4 lb. carrots, peeled, cut into 1/2 inch thick slices

Preheat oven to 375degrees F. Rinse chicken, pat dry with paper towels. Place chicken breast-side up in Deep Dish Baker. Zest lemon. Press garlic. Combine lemon zest, garlic, rosemary, pepper and salt to taste.

Rub olive oil on chicken and rub 1 Tbl. of herb mixture on chicken. Cut lemon into slices and place in cavity of chicken. Cut potatoes and carrots, place in bowl with remaining herb mixture, toss until coated.

Arrange vegetables around chicken in bottom of Baker. Cover with Baking Bowl. Bake til done.

8 bone-in, skinless chicken thighs 1/2 cup fresh lemon juice 1/2 cup reduced-sodium soy sauce 1/4 cup sugar 3 Tbsp brown sugar 2 Tbsp water 3 to 4 cloves garlic -- finely chopped 1/2 to 3/4 teaspoon ground ginger hot cooked basmati rice Rinse chicken with cold water and pat dry with paper towels. In a large non-stick skillet, combine all ingredients except chicken. Cook over medium heat 3-4 minutes. Add chicken. Simmer about 30 minutes or until chicken tests done, turning chicken several times . Serve over hot cooked rice.

1 (3 lb. or larger) broiler-fryer, whole or chicken breast 1 tsp. crumbled, dried oregano 2 cloves garlic, minced 2 Tblsp butter 1/4 cup sherry or water 3 Tblsp fresh lemon juice salt and pepper Wash chicken and giblets. Pat dry. Season chicken with salt and pepper. Sprinkle half the oregano and garlic inside cavity. Melt butter in large skillet. Brown chicken on all sides. Transfer to crock pot. Sprinkle with remaining oregano and garlic. Add sherry ( or water) to skillet. Stir to loosen brown bits. Pour into crock pot. Cover. Cook on low 8 hrs. Add lemon juice the
