Poultry - Chicken - Chicken Cacciatore In 20 Minutes

1 lb. boneless chicken strips
1/2 c. chopped onion
1 garlic clove, minced*
2 Tbsp. vegetable oil
1 can (28 oz.) diced tomatoes*
1 can (8 oz.) tomato sauce*
1 tsp. salt*
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. ground red pepper*
1 c. green pepper strips
1 1/2 c. instant rice

*May use 1 jar (16 oz.) spaghetti sauce and 1 1/4 c. water in place of these ingredients.

Brown chicken, onion and garlic in oil. Add tomatoes, tomato sauce, seasonings and green pepper. Bring to a full boil. Stir in rice. Cover, remove from heat. Let stand 5 minutes.

Stir before serving. Makes 4 servings in 20 minutes.
