Poultry - Chicken Casserole - Chicken-wild Rice Casserole

6 chicken breast halves (bone-in)
1 cup water
1 cup dry sherry
1 1/2 teaspoons salt
Pepper to taste
1/2 teaspoon curry powder (it works in this - don't omit it!)
1 medium onion, sliced
2 ribs celery, sliced
12 ounces fresh mushrooms, sliced
1/2 stick butter
1 (6-ounce) package Uncle Ben's long grain and wild rice with seasonings
1 cup sour cream
1 can cream of chicken
1/2 cup slivered almonds

Boil chicken in water seasoned with sherry, salt, pepper, curry powder, onion and celery. Cover and bring to a boil. Reduce heat and simmer for at least 1 hour. Remove from heat and strain. Reserve broth. Bone and skin the chicken and cut into bite-size pieces.

Cook rice according to package directions, using the reserved broth as part (all if there is enough) of the cooking liquid for the rice. Combine chicken, mushrooms, rice, sour cream, and cream of chicken soup. Put into a greased 9 x 13 casserole. Top with slivered almonds. Bake, covered, for 1 hour at 350 degrees. Uncover for the last fifteen minutes of cooking.

May be completely prepared and frozen ahead of time.

1 (10-3/4 oz) can cream of chicken soup 1/2 cup Best Foods® mayonnaise 1 Tablespoon lemon juice 1 teaspoon curry powder (or more to taste)10 oz. Blanched broccoli3 large chicken breasts, cooked and boned1 cup shredded sharp cheddar cheese Preheat oven to 325 degrees.Blend together: soup, mayonnaise, lemon juice and curry powder. Place broccoli in a baking dish. Cover with chicken. Pour sauce over and top with cheese. Sprinkle with paprika. Bake at 325°F. for 20 to 25 minutes. Tips: Barely blanch broccoli, just enough to turn it dark green or it will over cook. Drain very well.

3 Tbsp. butter 2 Tbsp. onion -- chopped 3 Tbsp. flour 1 1/2 cups diced, cooked chicken (or turkey) 3 1/2 to 4 cups hot seasoned mashed potatoes 1 1/2 cups milk 1 tsp. salt dash of pepper 1 1/2 to 2 cups diced, cooked carrots, drained 1 cup cooked peas -- drained Preheat oven to 375 degrees F. Brown onions in butter. Add flour and brown lightly to make a sauce. Add milk and stir well. Add diced chicken (or turkey), peas and carrots. Put layer of mashed potatoes in casserole dish. Add remaining ingredients. Cover with a scoop
