Poultry - Chicken Breasts Saltimbocca

3 whole chicken breasts, skinned and boned
6 small slices of ham
6 small slices of Swiss cheese
1/4 cup flour
1/4 cup fresh Parmesan cheese
1 tsp. salt
1/2 tsp. powdered sage
1/4 tsp. pepper
1/3 cup salad oil
1 (10 1/2 oz.) can condensed cream of chicken soup
1/2 cup dry white wine
6 toothpicks


Cut each boned chicken breast in half; pound until thin between two sheets of waxed paper.

Place slice of ham and cheese on each piece of chicken.

Roll up and tuck ends in; secure with toothpick.

Mix together flour, Parmesan cheese, salt, sage and pepper.

Dip chicken rolls into flour mixture. Reserve any leftover flour mixture.

Chill chicken for at least an hour or overnight.

In a large skillet heat oil and brown lightly brown chicken on all sides.

Place browned chicken in crock pot.

Mix together soup and wine. Pour over chicken in crock pot.

Cover and cook on low for 4-5 hours.

Turn control to high. Remove chicken.

Thicken sauce with leftover flour dissolved in a small amount of water. Cook on high for 10 minutes.

Serve with rice.

1-1/2 teaspoons dried oregano, divided 4 oz. (1 cup) shredded Provolone cheese, divided 4 boneless, skinless chicken breast halves 1 tablespoon vegetable or olive oil 1/2 cup chopped yellow onion 1 cup drained, chopped roasted red peppers (can be bottled) salt and pepper to taste 4 strips bacon, fried crisp, drained and crumbled Preheat oven to 375 degrees F. Butter a baking pan that can accommodate the roulades (at least 8” square). Mix 1/2 teaspoon oregano and 2 tablespoons Provolone in a small bowl. Set aside. Place one piece chicken between sheets of waxed paper. Pound until thin, about 1/4” thick.
