Poultry - Chicken - Batter Baked Chicken
Chicken pieces1/4 cup flour
1 tsp. salt
1/4 tsp. pepper
1/4 cup butter
Batter:
1 1/2 cups flour
1 1/4 tsp. baking powder
1 tsp. salt
4 eggs
1 1/2 cups milk
3 Tbsp. margarine
Preheat oven to 350 degrees F.
Rub chicken pieces with lemon. Dredge chicken with flour, salt and pepper. Brown in butter.
Batter: Combine flour, baking powder and salt. Beat until light 4 eggs. Add milk and margarine. Blend into flour mixture. Pour into baking dish. Place chicken on top of batter. Bake at 350 degrees for 1 hour.
