1 tablespoon olive oil
3/4 pound skinless boneless chicken breast, cut into bite-sized pieces
1/2 cup onion, chopped
3 garlic cloves, minced
1/3 cup barbecue sauce
1 (15 ounce) can black beans, drained
1/2 cup shredded reduced-fat sharp cheddar cheese
4 (10 inch) flour tortillas
1/4 cup low-fat sour cream

Heat oil in a lg. non-stick skillet over medium heat. Add chicken, onion and garlic; cook 8 minutes or until chicken is done, stirring constantly. Stir in barbecue sauce and beans. Sprinkle with cheese; cook 5 minutes or until thoroughly heated.

Warm tortillas according to package directions. Spoon with 1/2 cup chicken mixture down center of each tortilla; top with 1 tablespoon sour cream and roll up.

1 whole chicken (broiler/fryer) cut into 8 pieces 1/2 cup plus 2 tablespoons olive oil 10 sprigs fresh thyme (we omit this) 40 peeled cloves garlic Salt and pepper Preheat oven to 350 degrees F. Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours. Remove chicken from the oven, let rest for 5 to 10 minutes, carve, and serve. Yield: 6 servings Prep Time: 10 minutes
