Poultry - Chicken Appetizer - Baked Buffalo Wings

24 chicken drummettes
2 Tbsp. honey
2 Tbsp. tomato sauce
2 Tbsp. red pepper sauce
1 Tbsp. Worcestershire sauce
Blue Cheese Dipping Sauce (below)
celery sticks, if desired

Preheat oven to 180C. Line pan with aluminum foil. Remove skin from chicken.

Mix honey, tomato sauce, pepper sauce and Worcestershire sauce in resealable plastic food-storage bag. Add chicken. Seal bag and refrigerate at least 15 minutes but no longer than 24 hours, turning occasionally.

Place chicken in pan; sprinkle with paprika. Bake uncovered about 30 minutes or until crisp and juice of chicken is no longer pink when centers of thickest pieces are cut. Serve with celery sticks and sauce.

Blue Cheese Dipping Sauce:
1/3 cup reduced-fat cottage cheese
1/2 tsp. white wine vinegar
2 Tbsp. milk
1 Tbsp. crumbled blue cheese
1/8 tsp. white pepper
1 clove garlic, finely chopped

Place cottage cheese, vinegar, milk, half of the blue cheese, the white pepper and garlic in blender or food processor. Cover and blend on low speed until smooth and creamy. Spoon into serving dish. Stir in remaining blue cheese. Cover and refrigerate until serving.

8 cups corn tortilla chips 1 1/2 cups cooked chicken 2/3 cup barbecue sauce 15 oz. chili beans in sauce, undrained 2 1/4 oz. can sliced olives, drained 2-3 med. Roma tomatoes, chopped (1 cup) 3 cups shredded Colby-Jack cheese (12 oz.) Heat coals or gas grill for direct heat. Spray tw0-30x18 inch pieces of heavy duty foil with cooking spray. Spread tortilla chips on centers of foil pieces. Mix chicken and barbecue sauce. Spoon chili beans, chicken mixture, olives, tomatoes and cheese on chips. Wrap foil securely around tortilla chips. Cover and grill foil packets, seam sides up, 4-6 inches

3-4 Boneless chicken breasts (cooked) 2 cans cream of chicken mushroom soup 1 (8 oz.) container sour cream 1 cup stuffing crumbs butter Preheat oven to 350 degrees F.Cook the chicken. Mix the two cans of soup (don't add water or milk) with the sour cream. In a oven safe dish, place the chicken then the soup mixture. Top with the stuffing crumbs and a little butter. Bake on 350 til the edges are bubbly. Serve this over rice.
