Pies - Strawberry Cream Cheese Pie
4 1/2 cups strawberries - divided and sliced8 oz. cream cheese - softened
2 Tbl. sugar
1 pie crust - baked
Strawberry glaze:
1/2 cup strawberries - crushed
1/4 cup apricot juice or nectar
1 1/2 Tbl. cornstarch
2 Tbl. sugar
Preheat oven to 350° F. and bake pie shell for 12-15 min.
In a bowl, mix cream cheese and sugar. Pour into pie shell. Arrange 4 1/2 cups strawberries on top of cream cheese.
Prepare glaze: Mix all glaze ingredients in a saucepan and cook on low until it is thick and clear. Cool slightly and pour over berries. Chill.
