Pies - Pecan - Butternut Brownie Pie

4 extra-large egg whites, at room temp.
1/8 tsp. baking powder
1/8 tsp. cream of tartar
1 1/4 cups granulated sugar
14 graham cracker squares, broken into 1/2-inch pieces
1 cup pecan pieces
1 cup whipping cream
1/2 tsp. vanilla
Chopped pecans for garnish

Heat oven to 300 degrees. Lightly grease 9-inch pie plate.

In large mixing bowl, beat egg whites and baking powder until soft peaks form. Add cream of tartar, beating constantly. Add 1 cup of the sugar, a tablespoon at a time, beating constantly until stiff peaks form. Using a rubber spatula, fold in graham crackers and pecan pieces. Spoon into pie plate.

Bake 30 minutes or until toothpick inserted in center comes out clean. Cool completely on wire cooling rack.

In chilled small bowl using chilled beaters, beat cream just until it begins to thicken. Add remaining 1/4 cup sugar and vanilla and continue beating until stiff peaks form. Do not overbeat. Top pie with whipped cream. Sprinkle with pecans and refrigerate until served.

8 oz Cream cheese -- softened 1 Egg 1/3 c Sugar 1 t Vanilla 1 Pie shell -- unbaked 9 inch 1 1/2 c Pecan halves 2 Eggs -- slightly beaten 1/4 c Sugar 2/3 c Corn syrup-light 1/2 ts Vanilla Combine cream cheese, egg, 1/3 cup sugar, and 1 teaspoon vanilla. Beat until light and fluffy. Spread over bottom of pie shell. Arrange pecans on the cream cheese mixture. Mix remaining eggs, sugar, corn syrup, and vanilla, stirring well. Carefully pour over the pecans. Bake at 375 degrees for 40 to 45 minutes or until done.

1 (10 inch) unbaked pie shell 1 1/2 cups firmly packed brown sugar 3/4 cup honey 1/2 cup (1 stick) butter 1/4 cup heavy cream 4 cups (1 pound) pecans Heat oven to 350 degrees. Bake pie shell for 10 minutes. Meanwhile, in medium saucepan, combine brown sugar, honey and butter; mix well. Bring to a boil. Boil 3 minutes, stirring occasionally. Remove from heat; stir in cream and pecans. Pour into partially baked pie shell. Place pie on cookie sheet. Bake at 350 degrees for 30 to 35 minutes or until filling is bubbly.
