Pies - Impossible Pumpkin Pie

1 can (16 oz.) pumpkin
1 can (12 oz.) evaporated milk
2 tablespoons butter or margarine, softened
2 eggs
3/4 cup sugar
1/2 cup Bisquick baking mix
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract

Preheat oven to 350 degrees and grease a pie plate.

Beat all ingredients for 1 minute in blender on high or 2 minutes with electric mixer. Pour into pie plate. Bake until knife inserted in center comes out clean; about 50-55 minutes.

Yields 8 servings.

2 (9") ready-made shortbread piecrusts (found in baking section at supermarket), baked according to package directionsFilling: 3 large eggs 1/3 cup honey 1 can (15 oz.) pumpkin 1/2 tsp. salt 1 tsp. cinnamon 1/8 tsp. ground cloves 1/2 tsp. ground ginger 2 cups pecan halves Topping: 3 large eggs 1/2 cup light brown sugar 3/4 cup honey 2 TBL butter, melted 2 1/2 tsp. flour 1/8 tsp. salt Filling: In a large bowl, whisk together 1st 7 ingredients. Divide and pour into 2 prepared pie shells. Arrange pecans on top of each pie. Set aside until topping is ready.
