Pies - Custard Filling For Pastries

1/2 gal. milk
3 eggs
1/2 lb. sugar
1/2 lb. cake flour
dark rum and vanilla, to taste

Boil milk in thick bottom pan. Whip in eggs, sugar, and cake flour. The eggs and sugar are mixed first then add the flour to egg. Make sure you use cake flour.

Temper egg mix with half cup of milk or it'll be too thick to pour into milk in pan. You must whip this vigorously as its being poured into boiling milk or it'll scorch.

Once everything has come back to boil pour out onto marble slab or tray, sprinkle liberally with granulated sugar ( to prevent crusting) and let cool, when cool refrigerate until completely cold. Place in mixer and beat with paddle, when most of the lumps are gone add dark rum and vanilla.

3 eggs 1 cup sugar 2 cups cream 2 cups milk 2 tsp. vanilla. Beat eggs and milk together in large sauce pan. Add sugar. Cook over low heat, stirring constantly until thickened(approx 10 min). Mixture should smoothly coat the spoon. Cool, then add cream and vanilla. Refrigerateovernight. Variations: Soak 2 Tbls. raisins in 2 Tbls. rum for 30 min. Chop and return to rum to continue soaking. Add toward themiddle of freezing process. Choc Chip: Add 1/3 cup semi-sweet mini chocolate chips or shaved chocolate Grasshopper: Add 2 Tbls. creme de menthe and 1/3 cup (about 6) crumbled chocolate cookies.

1 liter milk2 tbls. lemon or orange skin grating1 tsp. cinnamon or vanilla8 tbls. sugar4-5 egg yolks Boil milk with cinnamon, and the gratings. Apart mix the dry ingredients and the yolks. When milk has boiled, filter and add, after cooling a little to mix of egg yolks. Mix well and bring to heat till it simmers slowly, stirring all the while.Keep it up until it thickens well, then put the pot in cold water, stirring till it cools enough not to form a skin. Then refrigerate. Add whichever fruits you prefer. Strawberries are wonderful!! Plums too.
