Pies - Cream - Bailey's Irish Cream Pie

3 eggs, separated
3/4 c. Bailey's Irish Cream
1 c. walnut meats, chopped
1/8 tsp. salt
2 c. Cool-Whip
2 Tbsp. shaved semi-sweet chocolate

Beat egg yolks until lemon-colored. Add salt and Bailey's. Cook in top of double boiler until yolk mixture thickens. Cool.

Beat egg whites until stiff. Combine egg/Bailey's mixture, egg whites and 2/3 of the Cool-Whip, using a folding motion. Fold in 3/4 cup of the nut meats. Scrape into a baked pie shell. Cover with remaining whipped topping. Sprinkle with remaining nut meats and chocolate shavings. Freeze for at least 4, but not more than 8 hours.

1 Unbaked 9-inch pie shell 1 tsp. Vanilla extract 1/4 cup Firmly packed light brown Sugar Few grains ground nutmeg 1/2 cup Butter or margarine, Softened 1/4 cup Flour 2 cups Cream Preheat oven to 450° F.Prick pie shell and bake 5 minutes. Set aside. Reduce oven temperature to 350 F. Mix the brown sugar with flour until blended. Spoon over bottom of partially baked pie shell. Combine the cream, extract, and nutmeg; pour over sugar in pie shell. Dot with the butter. Bake at 350 F about 55 minutes, or until crust is lightly browned

1 2/3 cup milk 1 cup water 3 egg yolks 1/4 cup milk 1 cup sugar 1/4 cup cornstarch Heat 1 2/3 cup milk and water together. Add dry ingredients. Beat egg yolks and milk and add to other mixture.Mix together sugar and cornstarch and add to mixture. Stir until thick. Add vanilla.
