Pies - Cranberry Pie By Pat T

Pastry for 2-crust pie
3 cups fresh cranberries, cleaned, rinsed and dried
1 cup raisins
2/3 cup coarsely chopped walnuts
3 Tbsp. flour
pinch of salt
1-3/4 cup sugar
grated rind of 1 orange
1/4 tsp. grated nutmeg
2 Tbsp. butter

Preheat oven to 450 degrees. Place cranberries, raisins and walnuts in large bowl.

Mix together in a small bowl the flour, sugar, salt, rind, and nutmeg. Pour over cranberry mixture. Mix well so that sugar is well incorporated.

Pour into pie shell. Dot with butter. Top with lattice strips. Bake 10 minutes at 450 degrees, reduce heat to 350 degrees and bake 35 minutes more.

2 cup fresh cranberries 1/2 cup almonds or walnuts, chopped 1 cup flour 1 cup sugar 3/4 cup margarine, melted 2 eggs 2 tsp. almond extract Preheat oven to 325° F.Mix cranberries, nuts and 1/2 cup sugar. Spread this in bottom of greased 10-inch pie plate; set aside. Mix together flour, sugar, eggs and almond extract. Pour over cranberry mixture. Bake for 55 to 60 minutes in preheated oven at 325 degrees.If you wish to keep for later use, freeze pie in plate.

Cranberry Pie 1 unbaked 9-inch pie crust Layer in crust: 1 1/2 cups fresh cranberries 1/3 cup brown sugar 1/3 cup chopped nuts Mix: 1 egg 1/3 cup margarine 1/2 cup sugar 1/2 cup flour Spread over cranberries. Bake at 350 degrees for 35 minutes. Serve with whipped or ice cream. --
