Pies - Coconut Praline Pie

1/2 cup chopped pecans or walnuts
1/3 cup butter
1/3 cup packed brown sugar
1 deep dish pie shell, baked and cooled
2 envelopes Dream Whip
2 1/4 cups milk, divided
2 (4 oz) packages instant vanilla pudding mix
1 1/4 cup coconut
1 tsp. vanilla

In small saucepan over medium heat cook pecans, brown sugar and butter until melted and mixture comes to a boil; boil exactly 30 seconds. Spread praline mixture into bottom of pre-baked pie shell.

In large bowl beat Dream Whip, 1 cup milk and vanilla at high speed 6 minutes or until thick and peaks form. Add remaining milk and pudding mixes, blend on low. When blended beat on high for 2 minutes. Stir in one cup of coconut.

Spoon mixture into pie shell.

Toast remaining 1/4 cup coconut and sprinkle on top for garnish.

Chill at least 4 hours before serving.

1 pie crust for 9" pie 3 eggs 1 1/2 cups sugar 1 1/2 cups of milk 1 1/2 cups coconut (3.5oz. can) 1 1/2 teaspoons of vanilla nutmeg Preheat oven to 400ºLightly beat eggs with mixer. Add remaining ingredients except nutmeg and beat lightly until mixed. Pour into unbaked pie crust. Sprinkle top with nutmeg. Bake at 400º for 20 min. Then bake at 300º for 36 min. Cool at room temperature and enjoy or freeze for later. Store in the refrigerator after serving.
