Pies - Butter Raisin Pie

3 Eggs
3/4 cup brown sugar, packed
3/4 cup corn syrup
3 Tblsp. butter, melted
4 tsp. all-purpose flour
1-1/2 tsp. vanilla
1/4 tsp. salt
2-1/4 cups currants or raisins
1 (9-inch) unbaked pie shell

Preheat oven to 400° F.

In bowl, beat eggs lightly. Stir in brown sugar, corn syrup, butter, flour, vanilla, and salt until blended. Stir in currants or raisins. Pour in pie shell.

Bake in 400 degree F. oven for 5 minutes. Remove heat to 250 degrees F. and bake for 30 minutes longer or until center is just firm to the touch, covering edges of pastry with foil if browning too much.

2 cups raisins 2 cups boiling water 2/3 cup sugar 2 1/4 tablespoons cornstarch 1/8 teaspoon salt 2 tablespoons butter Pastry for double-crust pie Combine raisins and water, bring to a boil. Simmer 3-5 minutes. Combine sugar, cornstarch and salt. Stir into hot raisins. Stirring constantly, bring to boil. Boil for 1 minute. Pour into unbaked 9-inch pastry shell. Dot with butter, put on top crust, cut vents and flute edges. Bake at 400 degrees for 30 to 40 minutes.
