Pasta And Pastasauces - Noodles Romanoff

1 (8-oz.) package wide egg noodles
3 Tbl. butter, divided
2 Tbl. minced onion
2 Tbl. flour
1/2 tsp. dry mustard
1 tsp. salt
Dash of cayenne pepper
1 cup milk
1/2 tsp. Worcestershire sauce
Dash of hot sauce
4 oz. sharp Cheddar cheese, grated (1 c)
1 cup sour cream
1 cup cottage cheese
1/4 cup dried bread crumbs


Cook noodles in lightly salted boiling water according to package directions. Add 1 Tbl. butter to boiling water. Drain noodles.

Preheat oven to 350 degrees F. Butter an 8-cup baking dish or casserole.

Melt remaining 2 Tbl. butter and saute onion until transparent. Stir in flour, dry mustard, salt, and cayenne pepper. Cook, stirring constantly, for 1 minute. Add milk, all at once, and stir until mixture thickens. Add Worcestershire sauce, hot sauce, and Cheddar cheese and stir until cheese melts. Fold sour cream and cottage cheese into sauce, then fold in hot cooked noodles.

Spoon into baking dish and top with bread crumbs. Bake 15 minutes longer.

Grease 2-quart casserole. Layer 1/3 noodles, 1/3 of the cheese, repeating and ending with cheese. Combine milk, eggs, salt and pepper. Pour over macaroni and cheese. Dot with butter. Sprinkle with Paprika. Cover and bake at 350 for 45 minutes, uncovering during the last 15 minutes of baking to let brown. Let stand a few minutes before serving.

1/2 pound fine noodles, cooked 1 cup cottage cheese 1 cup sour cream 3/4 cup finely chopped onion 1 cup sliced mushrooms 1 teas. Mix together the cottage cheese and 1 cup sour cream, Worcestershire, and Tabasco, salt and pepper. Mix all together, except for the topping and put into a buttered casserole. Bake for 20 minutes at 350. Mix the Parmesan cheese and sour cream together and spread over the top. Bake 10 minutes longer.
