Outdoor_cooking - Seafood - Salmon With Pineapple Salsa

2 cup coarse chopped fresh pineapple
1/4 cup chopped red onion
1 fresh jalapeno chopped
1 tbl. honey
1 lb. salmon fillet 1 inch thick
1/4 tsp. cumin
1/2 cup chopped red pepper
3 tbl. lime juice
1 tbl. cilantro


Salsa: pineapple, red pepper, onion, 2 tbl. lime juice, jalapeno, cilantro and honey. Brush fish with remaining lime juice and sprinkle with cumin. Grill 8-12 minutes or until flaky. Serve with salsa.

3 Tbl. light brown sugar 1 Tbl. honey 2 Tbl. butter 1/4 c Dijon mustard 2 Tbl. soy sauce 2 Tbl. olive oil 1 Tbl. finely grated ginger vegetable oil Melt brown sugar, honey and butter in a small over medium high heat. Remove from heat and whisk in the mustard, soy sauce, olive oil and ginger. Let cool. Preheat grill to med heat & brush salmon with oil and season with salt & pepper. Place salmon skin side down on grill. Coat flesh of fillet with brown sugar mixture, Grill 6-8 minutes to medium doneness, turning once after 5-6 minutes.
