Outdoor_cooking - Seafood - Grilled Or Broiled Salmon

1 cup sake
1/2 cup natural soy sauce or tamari
1 tablespoon grated fresh gingerroot
2 cloves fresh garlic, mashed
1 tablespoon dark-brown sugar
salmon fillets (allow 6 ounces per person)
lemon wedges (optional)

Prepare the marinade by mixing the sake (Japanese rice wine), soy sauce, ginger, garlic and sugar.

Rinse the salmon fillets under cold water, place in a glass or ceramic dish, and pour the marinade over. Cover and let marinate in the refrigerator for 1 - 3 hours, spooning the liquid over any exposed parts of the fish once or twice.

Prepare the grill or preheat the broiler to high heat.

Drain the fish and place on foil on grill or rack in oven. Cook until desired doneness, but do not overcook. Serve at once, with lemon wedges.

1 Tbl. minced shallots 1 Tbl. lemon juice 1/4 tsp. coarsely ground black pepper 1/8 tsp. dried tarragon 1/8 tsp. dried oregano 1 (6 oz.) tuna steak 3/4 inch thick cooking spray Black Bean Confetti Relish Combine first 6 ingredients in a small dish; cover and marinate tuna in refridgerator for 30 minutes. Prepare Grillor Broiler. Place fish on grill rack or broiler pan coated with cooking spray. Cook 2 minutes on each side until fish is done. Serve with Black Bean Confetti Relish. Black Bean Confetti Relish: 2/3 cup canned black beans, rinsed and drained 2 Tbl.

4 tuna steaks (6 oz. each) 1/3 cup olive oil 1/4 cup key lime juice 2 tablespoons Worcestershire sauce 2 tablespoons soy sauce 1 teaspoon Tabasco 2 large cloves garlic, halved Salt and pepper to taste Mix marinade ingredients together in a bowl. Lay the steaks out in a pan and cover with marinade. Put the steaks in the refrigerator to marinate for 10 minutes. Preheat the grill or broiler. Use the sauce to marinate the fish while it cooks. Cook 8-10 minutes on each side, or until the fish is white and flaky inside when pierced with a fork.
