Outdoor_cooking - Grilled Pineapple

1 pineapple
2 tablespoons butter or margarine, melted
2 tablespoons brown sugar
1 tablespoon Creme de Menthe
6 to 7 maraschino cherries, halved

Cut pineapple in half lengthwise, leaving green leaves attached. Make cuts on both sides of core, to but not through peel. Using a grapefruit knife, or other knife, cut pineapple away from peel. This will give you 4 sectioned off pieces of pineapple. Cut these crosswise into bite-sized pieces.

Melt butter or margarine and stir in brown sugar and Creme de Menthe.

Place pineapple on a plate or tray and spoon brown sugar mixture over sectioned pineapple, letting it ooze around sections. Reserve any left over brown sugar mixture. Place cherry halves down core section of pineapple.

Put pineapple halves on grill rack over medium-hot coals. Close lid and grill about 20 minutes or until heated; drizzling occasionally with reserved brown sugar mixture.

Halve and remove pits. Gently coat peach halves with the juice of 1 lemon to prevent darkening by oxidation. Cover and refrigerate until ready to grill. For cheese filling: Combine mascarpone cheese and sugar. If mascarpone is not stocked at your supermarket, substitute cream cheese. You may wish to mix the cream cheese with an equal portion of ricotta or farmer's cheese to more closely resemble the texture of mascarpone. Stir

9 firm ripe peaches, nectarines or pears 1/2 cup butter (1 stick), melted Preheat grill or broiler. Cut fruit in halves and remove pits. Brush lightly with a little melted butter. Grill fruit over medium-hot coals just until heated through, two or three minutes on each side. Don't allow fruit to get too soft. The fruit may also be broiled three or four minutes, turning once.
