Outdoor_cooking - Grilled Cornish Game Hens With Diablo Sauce

2 cornish game hens, cut into halves
salt, pepper, and mustard
cooking oil

Diablo Sauce:

1 large onion, peeled and chopped
2 pieces shallots, peeled and chopped
2 tbsp. white wine vinegar
2 tbsp. butter
1 tbsp. flour
2 cups chicken stock
2 tsp. tomato paste
2 tsp. chili powder (adjust according to taste)
1 tbsp. mustard
1 tbsp. chopped tarragon
salt and cayenne pepper


Rub halved cornish game hens with mustard. Season with salt and pepper. Brush with cooking oil and cook over a charcoal grill until well cooked on both sides, brushing occasionally with oil. Serve with Diablo Sauce.

Sauce: In a sauce pan, mix vinegar together with chopped onions and shallots. Simmer over high heat until vinegar is almost completely reduced. Add butter and flour. Mix well, then add chicken stock, tomato paste, chili powder and season with salt and pepper. Boil for 10 minutes, stirring occasionally. Just before serving, add mustard and chopped tarragon.
