Outdoor_cooking - Chicken - Lime Chicken Shish Kabob

2 Chicken breasts cut in Cubes
2 Limes juice of
2 cloves Garlic minced
1 tbl Low sodium soy sauce
1 tbl Apple juice concentrate
8 oz Medium mushrooms
1 Red bell pepper cut in 1" Cubes
16 White pearl onions
1 Green bell pepper cut in 1" Pieces
2 small Zucchini cubed



Combine lime juice garlic soy sauce and apple juice and marinate the chicken in the refrigerator at least 2 hours turning occasionally.

Alternate chicken and vegetables on skewers. Grill or broil about 10 minutes turning and basting with marinade. Serves 4.

Seal and marinate in refrigerator 8 hours, turning bag occasionally. Prepare grill. Remove chicken from bag, reserving marinade.

1/2 c. water 1/2 c. oil 1 c. (5 to 6 limes) fresh lime juice 3 cloves garlic, crushed 1 1/2 tsp. ground sage 1/2 tsp. pepper 2 chickens, quartered, skinned and excess fat removed Combine oil, lime juice, garlic, sage and pepper in a large plastic bag or bowl and marinate chicken at least 1 hour, overnight in refrigerator, if possible. Grill for about 1 hour, turning every 5 to 10 minutes, basting with marinade at each turn
