1 teaspoon black peppercorns
1/2 teaspoon white peppercorns
1/2 teaspoon red peppercorns
1/4 teaspoon dry mustard seed
1 crumbled bay leaf
4-5 allspice berries
2 teaspoons Kosher salt


Grind all in a spice grinder. Sprinkle on loin chops and place in refrigerator for 8 to 12 hours. Char-broil. I sometimes just pan brown and put them in a 400' oven till done. Again don't over-cook.
