Outdoor_cooking - Barbecued Strips Caribbean

This is a modification of a recipe that comes from "Fusion Food Cookbook" by Hugh Carpenter and Teri Sandison.
Serves 4 as a main entree.

Caribbean barbecue sauce:
1/4 cup chopped fresh cilantro
2 Tbl. finely minced fresh ginger
1/4 cup freshly squeezed lime juice
1/4 cup olive oil
1/4 cup rum
1/4 cup light brown sugar
1/4 cup soy sauce
2 tsp. Asian chile sauce
1 tsp. freshly grated nutmeg
1/2 tsp. ground allspice
1/2 tsp. ground cinnamon
1/4 tsp. salt

3 lbs. boneless pork strips

In a medium bowl, combine all of sauce ingredients and stir well.

Trim excess fat from pork. Place in ziploc bag with barbecue sauce and marinate overnight.

Grill outdoors until meat is cooked. Slice and serve.

You can also make extra sauce to use for dipping.

2 sides pork baby back or your favorite type 1 cup hoisin sauce 1/2 cup plum sauce 1/3 cup oyster sauce 1/4 cup wine vinegar 1/4 cup honey 2 T dark soy sauce 2 T dry sherry or Chinese rice wine 1 T dark sesame oil 1 T Asian chili sauce 1/2 t five-spice powder 1 T grated or finely minced orange zest 10 cloves garlic, finely minced 1/4 cup finely minced ginger 1/4 cup finely minced green onion, green and white parts Combine all ingredients and stir well. For 2 Racks Ribs: 1/3 Cup Red Wine Vinegar 1 Cup Water Place ribs in a shallow roasting pan and pour vinegar and water mixture over ribs. Cover with aluminum foil - tightly! Bake at 250 degrees for 30-45 minutes for baby backs and 1 hour to 1 hour 15 minutes for country style ribs. Baste with vinegar mixture halfway through cooking. Drain ribs and discard basting mixture. Grill ribs over medium to hot coals for 8 minutes, turn over and grill 8 more minutes. Baste generously with BBQ sauce of your choice.
