Mexican And Hispanic - Traditional Salsa

6 Roma Tomatoes
1 Jalapeno Pepper
3 Cloves Garlic
3 Small Onions
1 Yellow Wax Pepper
Juice of 1 Lemon

Remove and discard stems from peppers. Remove and discard outer membranesfrom onions and garlic.

Dice tomatoes and onions and toss gently in medium bowl. Mince garlic and add to taste.

For a milder salsa, cut Jalapeno in half and remove seeds. Dice Jalapeno and yellow wax peppers and add a little at a time until desired heat level is achieved. (Wear rubber gloves to protect hands from pepper's spiciness!) Squeeze in lemon juice. Add salt, pepper and chopped fresh cilantro (if desired) to taste.

Prepared salsa yields approximately3 cups.

*For a hotter salsa add more diced peppers and seeds.

1 cup canned refried beans 8 (10-inch) flour tortillas 4 (1 ounce) slices process American cheese 1/2 cup mild salsa 1 (16 ounce) package hot dogs 2 tablespoons vegetable oil Spread refried beans evenly on 1 side of each tortilla. Place half of a cheese slice on each tortilla; top with 1 tablespoon salsa, and 1 hot dog. Roll up tightly, jellyroll fashion, and place, seam side down, on a baking sheet. Brush with oil. Bake at 400 degrees for 5-7 minutes. Source: "Southern Living-8/00"

Mexican And Hispanic - Tomato Salsa
2 c. tomatoes, peeled and chopped 1/2 c. finely chopped onion 1/2 c. finely chopped green pepper 1 or 2 jalapeno peppers, seeded and minced or green chilies 1/2 tsp. cilantro (Chinese parsley) 1 Tbsp. sugar 1 tsp. salt 2 Tbsp. oil 8 oz. can tomato sauce 1/2 tsp. oregano leaves 1 Tbsp. lemon or lime juice 2 Tbsp. vinegar In large bowl, combine all ingredients. Cover; chill several hours. Makes 3 cups. This zesty sauce is good on just about everything from dipping tortilla chips to spooning over omelets, hamburgers, hot dogs, etc.
