4 tomatoes, diced
1/2 C. thawed corn kernels
2 T. chopped fresh coriander
1 T. minced jalapeno pepper
1 green onion, slices finely
1/4 tsp. salt
1 tsp. wine vinegar
pinch pepper


Serves 4 as a side dish.

6 Roma Tomatoes 1 Jalapeno Pepper 3 Cloves Garlic 3 Small Onions 1 Yellow Wax Pepper Juice of 1 Lemon Remove and discard stems from peppers. Remove and discard outer membranes from onions and garlic. Dice tomatoes and onions ant toss gently in medium bowl. Mince garlic and add to taste. For a milder salsa, cut Jalapeno in half and remove seeds. Dice Jalapeno and yellow wax peppers and add a little at a time until desired heat level is achieved. (Wear rubber gloves to protect hands from pepper's spiciness!) Squeeze in lemon juice. Add salt, pepper and chopped fresh cilantro

Salsa Fresca 4 plum tomatoes, diced 1/2 Cup thawed corn kernels 2 Tbl. chopped fresh coriander (cilantro) 1 Tbl. minced jalapeno pepper 1 Green onion, chopped 1 tsp. wine vinegar 1/4 tsp. salt pinch of black pepper In bowl, stir together tomatoes, corn, coriander, jalapeno, onion, vinegar salt and pepper. Makes 4 servings.
